Caper or Capparis Spinosa is a bushy plant that bears rounded fleshy leaves and large white flowers. This is a plant that grows especially in Mediterranean countries and has been widely used for consumption since ancient times. The Santorini caper bush grows in the steep slopes of the Caldera and the stone-built walls between the vineyards, the houses and the paths thoughout the island. From the wild caper the flowers and the leaves are collected and can be used to give more flavour to a salad and as a tasty addition to casseroles and other dishes.
