A beautiful rosé wine made with the popular Xinomavro variety of Northern Greece, with extra depth and character owed to the three months ageing in oak barrels. The fruit for Rose de Xinomavro is sourced from the young 3-4 years old plantings that in some years will provide the raw material for the estate’s top red label Earth and Sky, also available at Isle of Olive.


Characteristics: Rosé colour with a fire brick tint, tight and focused on the nose, with vegetal aromas, reminiscent of tomatoes and forest floor. On the background the wine reveals bright red fruit aromas of cherries and strawberries. The palate is vibrant with refreshing acidity, balancing nicely the few residual sugars present and a juicy mouth-fill underlined by smooth but ripe tannins. The aftertaste is delicious, fresh and persistent. Serve it cold, so it can be refreshing or in room temperature to enjoy its full aromatic complexity. Ready to drink now and will remain so for at least 2 more years unlike most rosé wines that are best consumed fresh.


Pairings: This rosé could be paired with many different dishes as it is highly versatile. It can be served with seafood dishes and fatty fish such as tuna and salmon, it will surprise you paired with grilled meat with light sauce and of course it compliments most traditional greek vegetarian dishes such as stuffed tomatoes and peppers (yemista), fresh green beans, and potato, courgette and aubergine bake (briam) always accompanied with greek feta.
