Apostolos Thymiopoulos, one of Greece’s most exciting young winemakers, is considered an absolute expert on Xinomavro and Naoussa, the region the grape is indigenous of. He has pioneered biodynamic viticulture and winemaking in the region and his wines are unique examples of the elegance and purity that Xinomavro can deliver.

While the fruit of his older, mature vines (some of which date back to the beginning of the 20th century) is used for the production of his flagship red Earth & Sky, the grapes hailing from his younger plots (18-20 years old, itself not that young at all considering general winemaking commercial standards) provide the material for his Rosé and this Jeunes Vignes.

Making the most of youthful aromas and of Xinomavro’s trademark acidity, Apostolos has managed to create a young, approachable wine that is simultaneously playful and refined, easy-drinking and complex.

What’s in the glass: Bright, pure and lively Xinomavro with delicious aromas of strawberry, sour cherry, tomato leaf and olive tapenade. The palate is vibrant, lifted by a pleasant acidity and grippy but very elegant tannins. Don’t forget to serve slightly chilled.
