Trahanas is a dish made in Greece since antiquity; it is boiled cracked wheat and soured milk used as the basis for a soup. “Politiko” in Greek (not to be confused with politics..) refers to products or recipes originating in Asia Minor. That in itself is a guarantee of a special experience for the taste buds, since “Politiko” usually involves a combination of exotic herbs and spices.


This is a traditional recipe for trahana soup or frumenty, produced with care by the Martavaltzoglou family in North Greece. It has a spicy, rich taste and enticing reddish colour.
