Preparation time: 1hr 15mins

Serves: 24 pieces

Square baking tray: 30cm x 24cm


150ml organic extra virgin olive oil

1 tsp. cinnamon

1 tsp. ground clove

1 tsp. nutmeg

100g brown sugar (or white, if you prefer)

750ml freshly squeezed orange juice

Zest of 2 oranges

800g self raising flour

200g sultanas

1 Tbsp baking powder

Icing sugar (to sprinkle on top)


In a bowl, add the olive oil, spices, sugar, zest and orange juice and blend well using a mixer. In another bowl, mix the flour and baking powder and then gradually start pouring the liquid mix making sure you keep stirring. At the end knead the dough using your hands and add the sultanas.

Preheat the oven at 180C. Pour the mix on a greased baking tray (you can also use grease proof paper) and bake for about 45mins or until it has risen. Cut the cake into small pieces (as it is quite moist and filling!) and serve not forgetting to sprinkle icing sugar on top!
