4-5 potatoes

1 jar tuna from Alonnisos

Spring onion (or white/red onion)

Capers

Sea fennel

Organic extra virgin olive oil

Unrefined sea salt

Black pepper

Wild thyme

1 lemon

 

Steam the potatoes until they are soft; alternatively you can boil them, but both the flavor and the texture are better if you steam them. Once ready set them aside and allow them to cool. Place the potatoes in a bowl and add the tuna, the finely chopped spring onion (or other onion of your choice), the capers and some sea fennel. Sprinkle some extra olive oil and season with sea salt, freshly ground black pepper, thyme and the juice of a lemon.

This makes a great summery fresh salad! And always keep in mind that cooking with simple good quality ingredients is enough to create a great dish and impress you family and guests!
